Generally when defending yourself with a knife you are supposed to slash the opponents arms. The reason for this is if you hit their tendons or muscles it prevents them from attacking you while not likely to be lethal. If you go for a lethal strike then you can end up killing the attacker and they may still be a threat while they are bleeding out, making it end much worse for everyone.
Overall though it looks like a pretty tragic situation. The attackers should not have kept pursuing someone with a knife and escalating the situation. Similarly those who were backing up could have tried to first run. I found that there's a version here that doesn't show the full thing but has some audio:

It does look like the one with the knife was yelling and trying to intimidate. We can't see the situation before but the first step should always be to try to leave. In almost all fights that I have seen break out in public, it was often between two males and they almost always had multiple times to leave on both sides but they kept escalating things. Instead of doing the threatening demeanor and brandishing so heavily, what the defender should have done here was probably stand more still, put his left hand up, and tell the attackers calmly that they don't want any trouble and that they were going to leave.
Additionally, doing a stabbing maneuver of this sort is extremely disastrous and not proper to do when using a knife for self-defense. Generally you never want to reach the point where you have to use the knife because it will not end well for anyone, regardless of the outcome of the fight the wielder is certainly likely to go to jail for some time. The problem is that going for a stab of this sort towards the neck is instantly lethal if it connects, which is what happens. Secondly, doing a long lunge like this opens up the knife wielder to a large counter attack. The proper defense here is to do quick slashes at the opponents forearms multiple times in order to disable them and to buy time to escape. It's possible that the defender did not have much experience with knives and so chose to attack in this way, he may have not meant to intentionally kill them but this just shows that it can be very dangerous to have a knife without having a proper plan in mind.
I do carry a knife myself, in America where you are allowed to. Mainly the purpose is to have some utility if needed and it can serve as a seat-belt cutter or a way to cut things in case of emergencies. In defense situation I would only use it if all escape options were exhausted and it was truly life or death.
Definitely though conflict de-escalation is very important. Avoid being in places at extreme hours of the night, try to run first, and if you want to carry a knife for defense make sure that you know the downsides and how it should be used if you are attacked.
